Description Summary:
This position will assist the Executive Chef in ensuring proper food preparation, maintaining a high standard of service at all times, ensuring all health and safety regulations are implemented, adhered to and reviewed regularly. Kitchen Assistant will assist with food production at Marianna Foods and/or
other DelGrosso Park subsidiary organization(s) when the Park is closed.

Essential Functions:
• Assist Executive Chef with food preparation, training and other task as assigned.
• Produce all food according to recipes, correct portion size and temperature.
• Ensure all products used are of a high quality.
• Ensure all areas are clean and sanitized.
• Ensure every food item leaving the kitchen is of the highest quality in flavor and presentation.
• As directed, assist in monitoring staff breaks and job assignments to ensure compliance with child labor laws.
• As directed, ensure job assignments have been effectively completed in a timely manner.
• Report disciplinary issued and department/company policy violations to Executive Chef for action and follow through.
• As directed, guide production team toward completion of daily work assignments, ensuring the highest level of guest satisfaction, teamwork and financial/operational performance.
• Practice and ensure all food service team members follow food safety guidelines. Monitor and document temperatures as directed and required.
• Assist with food production at DelGrosso Park subsidiary organization(s) as directed in the off-season:
o Operate or assist in operation of floor slicer, hand slicer, condiment packaging machine, dressing packaging machine, chopper/shredder, dressing mixer, and dish machine.
o Perform raw material preparation of various meats, cheeses, and vegetables.
o Assist with portioning various meats using a digital scale according to production schedule.
o Assist with preparation, production, and packaging of various product condiments.
o Assist with product line production.
o Perform essential cleaning and sanitizing of machine, equipment, utensils, tables, sinks, walls, floors, and drains per sanitation program.
o Track and record all essential documentation as required by department
Requirements Educations & Qualifications:
Formal culinary training with a minimum of 1-3 years of culinary production experience in a high volume kitchen environment preferred. Must be proficient in all stations of the kitchen. ServSafe Certification is required or the ability to obtain the certification with 3 months of hire. Must be able to stand for all or most of 8-10 hour shift and work a minimum of 6 days and 55 hours per week during the Park season; must be able to start as early 3 AM or 4 AM during the off-season. Ability to work a variable schedule including evenings, weekends and holidays during peak season months is required. Must effectively work in a high-volume, fast-paced, guest-service oriented environment and maintain a positive attitude.
